Einkorn is one of the earliest cultivated forms of wild wheat, characterized by the fact that it is not fertilized or sprayed with chemicals and accepts no chemicals from the soil.
It contains a high amount of nutrients – minerals and vitamins. The wild wheat contains almost times more fat, protein, phosphorus, vitamins of groups B and A.
It is used in the gluten-free diet. For the absence of gluten it has no baking qualities where yeast is used.
It is very suitable for making bread with soda or yeast, as well as an additive!
